COZY 15 BEAN SOUP

Warm up on a cold day with this hearty and flavorful 15 bean soup recipe. Packed with protein and veggies, it’s the perfect comfort food for any occasion.Find the 15-bean mix in the dry bean aisle at your favorite grocery store. Plan ahead and soak the beans the night before while you sleep. This simple soup will quickly become a favorite.

15 BEAN SOUP INGREDIENTS

15 Bean Mixture: Found in the dried beans section. I used Hurst Beans 15.
Vegetable oil
Onions, preferably sweet yellow onions
Celery
Smoked sausages, such as Polska Kielbasa
Garlic, naturally fresh
Spices: paprika, chili powder, dried thyme, dried marjoram or dried oregano and pepper Ground cayenne pepper
Chicken broth or low-sodium vegetable broth
Roasted tomatoes
Carrots
Bay Leaf

HOW TO MAKE 15 BEAN SOUP

First, place the beans in a colander in the sink. Rinse the beans in cold water, sort them and discard any leftovers. Then place the beans in a large pot of cold water.Lassen Sie sie über Nacht oder mindestens 8 Stunden einweichen, spülen Sie sie dann ab und lassen Sie sie erneut abtropfen.

Dann 2 Esslöffel Olivenöl in einen großen Topf bei mittlerer bis hoher Hitze geben. Zwiebel, Sellerie und geräucherte Wurst hinzufügen. Kochen, bis Zwiebeln und Sellerie weich und die Wurst gebräunt sind. Reduzieren Sie die Hitze auf eine niedrige Stufe und fügen Sie Knoblauch, Paprika, Chilipulver, Thymian, Majoran und Cayennepfeffer hinzu.Cook for 1 minute, stirring constantly. Add another tablespoon of oil if necessary.

Now add the beans, chicken broth, roasted tomatoes, carrot and bay leaf. Increase the heat to medium-high and allow the pot to simmer. Then reduce and simmer until the carrots and beans are soft.Don’t forget to remove the bay leaf before serving as it may have sharp edges.
