Ingredients:
For the Cookie Cake:
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 massive egg
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 tablespoon cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon desk salt
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup mini M&M’s (red, white, & blue)
- 1/4 cup sprinkles (jimmies)
For the Frosting:
- 1/4 cup unsalted butter, softened
- Pinch of salt
- 3/4 teaspoon vanilla extract
- 1 cup powdered sugar
- 1 tablespoon heavy whipping cream
- Extra sprinkles for decoration
Instructions:
Prepare the Oven and Pan:
Preheat the oven to 375°F (190°C). Spray a 9-inch pie plate with nonstick baking spray.
Mix the Cookie Dough:
In a massive mixing bowl, beat the softened butter, brown sugar, and granulated sugar till creamy.
Add the egg and vanilla extract, beating nicely to combine.
Gradually combine in the flour, cornstarch, baking soda, and salt till a smooth dough forms.
Stir in the chocolate chips, mini M&M’s, and sprinkles till evenly distributed.
Bake the Cookie Cake:
Spread the dough evenly in the organized pie plate.
Bake for 17-18 minutes or till the edges are gently browned and the core is set.
Remove from the oven and let cool absolutely on a wire rack.
Prepare the Frosting:
In a small bowl, beat the 1/4 cup of softened butter, pinch of salt, and vanilla extract till creamy.
Gradually add the powdered sugar and heavy whipping cream, beating till the frosting is mild and fluffy. Use a spatula sometimes to scrape down the aspects of the bowl.
Decorate the Cookie Cake:
Once the cookie cake has cooled, switch the frosting to a piping bag geared up with a 1M icing tip.
Pipe ornamental swirls round the outer facet of the cookie cake.
Immediately sprinkle the frosted location with extra sprinkles to make sure they stick earlier than the frosting sets.
