Ingredients

For the Chocolate Cake:

  • 2 cups (250g) all-purpose flour
  • 1 ¾ cups (350g) granulated sugar
  • ¾ cup (65g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup (240ml) buttermilk
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) hot water

For the Coconut Filling:

  • 1 cup (240ml) sweetened condensed milk
  • 2 cups (200g) shredded coconut
  • 1 tablespoon cornstarch (optional, for thickening)
  • ½ cup (120ml) heavy cream

For Optional Topping:

  • Chocolate ganache (made with equal parts melted chocolate and heavy cream)

Instructions

Step 1: Prepare the Chocolate Cake

  1. Preheat your oven to 350°F (175°C). Grease and line two rectangular or round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat the mixture on medium speed until smooth and well-combined.
  4. Gradually add the hot water to the batter, mixing until the batter is smooth and slightly thin.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before assembling.

Step 2: Make the Coconut Filling

  1. In a medium saucepan, combine the sweetened condensed milk, shredded coconut, and heavy cream over low heat.
  2. Stir constantly until the mixture thickens, about 5-7 minutes. If needed, add the cornstarch dissolved in a little water for additional thickness.
  3. Allow the filling to cool completely.

Step 3: Assemble the Cake

  1. Place one layer of the chocolate cake on a serving plate.
  2. Spread the coconut filling evenly over the top of the cake.
  3. Place the second layer of cake on top, pressing gently to adhere.
  4. For extra indulgence, pour the chocolate ganache over the top of the cake and let it drip down the sides.

Step 4: Chill and Serve

  1. Chill the assembled cake in the refrigerator for at least 1 hour to set.
  2. Slice and serve chilled or at room temperature.

Conclusion

This chocolate cake with coconut filling is a delightful treat that combines the best of two worlds—rich, moist chocolate layers and a sweet, creamy coconut center. It’s easy to make and versatile enough for any celebration. Serve it with a dollop of whipped cream or a scoop of vanilla ice cream for an added touch of luxury. Enjoy!
