Southern Chicken Pot Pie Turnovers

When I was a child, we used to go to the finer of the two supermarkets and pick something from the prepared meal section when my parents didn’t feel like cooking or eating out. It was a rare occasion that this occurred, but when it did, it felt very wonderful. I always got the chicken potpie and my brother always got the garlic bread. We would carry our harvest home, reheat what needed to be heated, and then arrange everything like a picnic in the dining room.

INGREDIENTS

  • 2 tablespoons olive oil
  • 4 chicken breasts
  • 1 yellow onion, diced
  • 1 cup frozen peas
  • 2 large carrots, diced
  • ¼ cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon fresh or dried pepper and salt
  • ¼ cup powder of purpose
  • ¼ cup dry white wine
  • 3 cups chicken stock
  • ¼ cup milk or heavy cream
  • 2 sheets frozen puff pastry, thawed
  • 1 egg, beaten

INSTRUCTIONS

1. Put the olive oil in a large heavy pan. Then put it on medium heat. Add the chicken and cook until browned. Turn again to ensure even cooking. Remove from the pot and add the onion, carrots, garlic, bay leaf, thyme, salt and pepper. Cook for about 6 minutes until the vegetables begin to soften.Meanwhile, cut the chicken into cubes or shred
2. Return the chicken to the pot. Then add nuts and flour. Cook for another minute before deglazing with white wine. Be sure to scrape up all the good stuff from the bottom of the pot. Mix the ingredients together making sure to incorporate all the flour.
3. Add the chicken stock slowly while stirring with the milk. Reduce heat to medium and simmer until sauce thickens, about 10 minutes
4. Preheat oven to 375F.
5. Roll the puff pastry on a lightly floured surface. Then cut each sheet into four equal squares and arrange the chicken mixture in the center of each pastry. Fold the corners to form a triangle. Pin the ends together. Use a little water if it doesn’t stick. If you’re feeling really fancy Use a fork to tear apart the seams.
6. Brush with egg and bake until golden brown on top, about 20-30 minutes, let it cool for at least 5 minutes before serving.
