Ingredients

For the Topping:

  • ¼ cup unsalted butter, melted

  • ½ cup packed light brown sugar

  • 1 can (20 oz) pineapple slices in juice, drained

  • Maraschino cherries (optional, for center decoration)

For the Cake:

  • 1 ½ cups all-purpose flour

  • 1 cup granulated sugar

  • ½ cup unsalted butter, softened

  • 2 large eggs

  • ⅓ cup sour cream

  • ¼ cup milk

  • 1 ½ teaspoons baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 teaspoon vanilla extract

How to Make Pineapple Upside Down Cake

1. Prepare the Topping

Preheat your oven to 350°F (175°C).
Pour the melted butter into a 9×13-inch baking dish. Evenly sprinkle the brown sugar over the butter. Arrange the pineapple slices on top of the sugar, and place a maraschino cherry in the center of each pineapple ring if desired.

2. Make the Cake Batter

In a large mixing bowl, beat the butter and sugar together until creamy and light. Add the eggs one at a time, mixing well after each addition.
Mix in the sour cream, milk, and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined — do not overmix.

3. Assemble and Bake

Carefully spread the cake batter over the arranged pineapples in the baking dish.
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

4. Cool and Invert

Allow the cake to cool in the pan for about 10–15 minutes.
Run a knife around the edges, place a serving plate upside down over the baking dish, and carefully invert the cake onto the plate.

Tips for the Best Pineapple Upside Down Cake

  • Use room temperature ingredients for a smoother batter.

  • Don’t overmix the batter to keep the cake light and fluffy.

  • Decorate with cherries for a classic and festive touch.

  • Serve warm with a scoop of vanilla ice cream for an extra treat
