Ingredients
- 2 small pink onions reduce in half of and sliced thin
- 1 cup white vinegar or cider vinegar see notes
- 1 cup water
- ¼ cup sugar see notes
- ¼ teaspoon salt
- 2 small cloves garlic
- 1 teaspoon black peppercorns
- ¼ teaspoon pink pepper flakes optional

Add the vinegar, water, sugar, and salt to a small saucepan. Heat over medium-high warmness till the sugar dissolves. Turn off the warmness and let it cool for 3-4 minutes.
Add the sliced onions to smooth resealable jars. Add a few peppercorns, a clove of garlic, and a pinch of purple pepper flakes to every jar. Notes
