1 tbsp lemon juice
-
1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
For Frying:

Powdered sugar or cinnamon sugar for dusting
Instructions
Step 1: Prepare the Dough
-
In a large bowl, whisk together the flour, salt, and sugar.
-
Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
-
Stir in the buttermilk just until the dough comes together.
-
Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Step 2: Make the Apple Filling
-
In a skillet over medium heat, melt butter and add the diced apples, sugar, cinnamon, nutmeg, and lemon juice.
-
Cook for 5–7 minutes, stirring often, until apples soften slightly.
-
Stir in the cornstarch mixture and cook another 1–2 minutes until thickened.
-
Remove from heat and let cool completely.
Step 3: Assemble the Pies
-
Roll out the dough on a lightly floured surface to about 1/8-inch thickness.
-
Cut into circles (about 5 inches wide).
-
Place a spoonful of cooled apple filling in the center of each circle.
-
Fold over into a half-moon shape and crimp the edges with a fork to seal.
-
Chill the assembled pies for 10 minutes to help them hold their shape.
Step 4: Fry the Pies
-
Heat oil in a deep pan to 350°F (175°C).
-
Fry pies in batches for 2–3 minutes per side or until golden brown.
-
Drain on paper towels.
Step 5: Finish and Serve
-
Dust with powdered sugar or toss in cinnamon sugar while still warm.
-
Serve immediately and enjoy!
