Magic Vanilla Custard Cake – Light, Creamy & Bakes in Layers
This Magic Vanilla Custard Cake is a beautiful dessert that separates into three layers while baking: a fluffy sponge on top, a creamy custard center, and a soft base. With simple ingredients and a rich vanilla flavor, it’s a comforting and elegant treat perfect for any occasion.

4 large eggs, room temperature

¾ cup granulated sugar

1 tbsp water

1 tsp vanilla extract

½ cup unsalted butter, melted and slightly cooled

¾ cup all-purpose flour

2 cups lukewarm milk

Powdered sugar, for dusting
Instructions
Step 1: Prepare the Oven and Pan
Preheat your oven to 325°F (160°C). Grease or line an 8×8-inch square baking dish.
Step 2: Whip the Egg Yolks

Separate the eggs. In a bowl, beat the egg yolks with sugar, water, and vanilla until pale and thick.

Add the melted butter and mix well.
Step 3: Add Dry Ingredients and Milk

Sift in the flour and stir until just combined.

Gradually add the warm milk, whisking slowly to keep the batter smooth. The mixture will be thin.
Step 4: Beat Egg Whites and Fold

In a separate bowl, beat the egg whites to stiff peaks.

Gently fold them into the batter in three additions. Do not overmix — you want some lumps for a light texture.
Step 5: Bake

Pour the batter into the prepared dish.

Bake for 50–60 minutes, or until the top is golden and the center is slightly jiggly.

Cool completely, then refrigerate for at least 2 hours.
Step 6: Serve
Dust with powdered sugar and serve chilled. Enjoy the layers!
