Strawberry Cheesecake Cookie
Ingredients
For the Cookie Dough:

1 box (15.25 oz) strawberry cake mix

1/3 cup vegetable oil

2 large eggs

3½ tbsp light brown sugar
For the Cheesecake Filling:

6 oz cream cheese, softened

3 tbsp granulated sugar

1/2 tsp vanilla extract
Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the cheesecake filling: In a small bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth. Scoop into small dollops and freeze for 20–30 minutes.

Make the cookie dough: In a large bowl, combine the strawberry cake mix, eggs, oil, and brown sugar until a soft dough forms.

Assemble the cookies: Scoop a tablespoon of cookie dough, flatten it, and place a frozen cheesecake dollop in the center. Top with another tablespoon of dough and seal the edges.

Bake for 10–12 minutes, or until edges are set and tops are slightly cracked.

Let cookies cool completely on a wire rack before serving.
