Ingredients
For the Chocolate Sponge Cake:

½ cup granulated sugar

1 cup all-purpose flour

½ cup unsweetened cocoa powder

1 tsp baking powder

½ tsp baking soda
-
¼ tsp salt
-
3 large eggs
-
½ cup milk
-
¼ cup vegetable oil
-
1 tsp vanilla extract

½ cup hot water
For the Peanut Butter Filling:

1 cup creamy peanut butter
-
½ cup powdered sugar
-
4 oz cream cheese, softened
-
2 tbsp butter, softened
-
2–3 tbsp milk (as needed for consistency)
For the Chocolate Ganache:

1 cup heavy cream
-
1½ cups semi-sweet chocolate chips
-
1 tsp vanilla extract
Instructions
Step 1: Make the Chocolate Sponge

Preheat your oven to 350°F (175°C).

Line a jelly roll pan (15×10-inch) with parchment paper and spray lightly with cooking spray.

In a bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Add eggs, milk, oil, and vanilla. Beat until smooth.

Stir in hot water carefully to thin the batter.

Pour into prepared pan and bake for 10–12 minutes.
Step 2: Roll the Cake

Lay a clean kitchen towel on a flat surface and dust it generously with powdered sugar.

While the cake is still warm, gently turn it onto the towel and peel off parchment.

Roll the cake up with the towel (starting from the short end). Let cool completely.
Step 3: Prepare the Peanut Butter Filling

Beat together peanut butter, cream cheese, butter, and powdered sugar.

Add milk a little at a time until the mixture is spreadable.
Step 4: Fill and Re-Roll

Carefully unroll the cooled cake.

Spread the peanut butter filling evenly over the cake.

Re-roll the cake (without the towel), then wrap it in plastic and refrigerate.
Step 5: Make the Ganache Topping

Heat the heavy cream until just simmering.

Pour over the chocolate chips and let sit 2–3 minutes.

Stir until smooth and glossy. Mix in vanilla.
Step 6: Decorate and Serve

Pour ganache over the rolled cake.

Add decorative swirls of peanut butter or piped filling on top if desired.

Chill until set. Slice and serve!
