These Golden Mediterranean Salmon Cakes bring together the richness of salmon, the saltiness of feta cheese, and the earthy freshness of spinach for a wholesome dish that’s bursting with flavor. Perfect as an appetizer, lunch, or light dinner.
Ingredients:

2 cans (6 oz each) salmon, drained and flaked

1 cup cooked spinach (squeezed dry and chopped)

1/3 cup crumbled feta cheese

1/2 cup breadcrumbs (or almond flour for low-carb)

1/4 cup finely chopped red onion
-
2 cloves garlic, minced

2 eggs

1 tablespoon lemon juice
-
1 teaspoon dried oregano
-
Salt & black pepper to taste

2 tablespoons olive oil (for frying)
Instructions:
1. Mix the Ingredients:

In a large bowl, combine salmon, spinach, feta, breadcrumbs, onion, and garlic.

Add in the eggs, lemon juice, oregano, salt, and pepper. Mix until well combined.
2. Shape into Patties:

Form the mixture into 8 small cakes or 4 large ones.

If the mixture feels too wet, add a bit more breadcrumbs to firm it up.
3. Cook the Cakes:

Heat olive oil in a skillet over medium heat.

Fry salmon cakes for 3–4 minutes on each side, or until golden brown and cooked through.
4. Serve:

Serve hot with a side of tzatziki, Greek salad, or lemon wedges.
