Ingredients:

  • 2 cups fresh dandelion petals (yellow parts only – no green)

  • 2 cups sugar

  • 3/4 cup water

  • 1 tablespoon lemon juice

  • Optional: parchment paper or silicone mat for cooling

1. Prep the Petals:

  • Harvest dandelion heads from an area free of chemicals.

  • Pluck only the yellow petals, avoiding green bases which are bitter.

  • Rinse lightly and pat dry.

2. Make the Syrup:

  • In a saucepan, combine sugar, water, and lemon juice.

  • Heat over medium heat, stirring occasionally, until the sugar dissolves.

3. Add the Petals:

  • Stir in the dandelion petals.

  • Simmer for about 10–15 minutes until the syrup thickens and the petals become glossy.

4. Form the Candy:

  • Carefully spoon small portions onto parchment paper or a silicone mat.

  • Let them cool and harden completely.

  • Use only fresh, unsprayed dandelions from clean areas.

  • You can add a drop of honey or vanilla extract for extra flavor.

  • Store in an airtight jar at room temperature.
