These Baked Cream Cheese Chicken Taquitos are crispy on the outside, creamy on the inside, and packed with shredded chicken, cream cheese, and cheddar. Baked instead of fried, they’re a healthier twist on a Mexican-inspired comfort food that the whole family will love.

 Ingredients

  • 2 cups cooked chicken, shredded

  • 4 oz cream cheese, softened

  • 1/2 cup shredded cheddar cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon chili powder

  • Salt and black pepper, to taste

  • 8 small flour tortillas

  • Cooking spray or olive oil, for brushing

  • Optional toppings: sour cream, chopped tomatoes, salsa, cilantro

 Instructions

Step 1: Preheat the Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2: Mix the Filling

In a large bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, and spices (garlic powder, onion powder, chili powder, salt, pepper). Mix until well blended.

Step 3: Assemble the Taquitos

Spoon about 2 tablespoons of the chicken mixture onto each tortilla.
Roll tightly and place seam-side down on the prepared baking sheet.

Step 4: Bake

Lightly brush the tops of the taquitos with olive oil or spray with cooking spray.
Bake for 15–20 minutes, or until golden and crispy.

Step 5: Garnish and Serve

Serve warm with sour cream, salsa, or a sprinkle of chopped cilantro.
