MEXICAN PIZZA RECIPE
Mexican pizza is filled with seasoned ground beef, refried beans, melted cheese and enchilada sauce stuffed between two flour tortillas. These personal pizzas are a fun twist on the classic!

If you love Mexican food and enjoy a slice of hot and gooey pizza every now and then, you’ve come to the right place. These Mexican pizzas are the best of both worlds, combining the bold flavors and textures of classic Mexican dishes with the beloved American staple: pizza!

These delicious Mexican pizzas start with a crispy flour tortilla with refried beans, a seasoned ground meat mixture and another crispy tortilla.A savory enchilada sauce is then drizzled on top, followed by a sprinkle of cheddar and pepper jack cheeses, diced tomatoes, scallions and olives. To allow the cheese to melt and bubble, the pizza is placed in the oven for 5 minutes, creating a warm, gooey Mexican pizza ready to eat.

They’re rich in flavor, easy to make and perfect for make-your-own pizza nights. You can also modify the recipe to serve to a larger crowd or a single serving if it’s just for one person!

Ingredients:

  • About 1/2 pound ground beef or ground turkey
  • 1/2 tablespoon taco seasoning
  • 1/4-1/2 cup refried beans
  • 1/4-1/2 cup salsa (jarred or homemade)
  • 1/4 -1/2 cup shredded cheddar cheese (or whatever you prefer)
  • 2 to 4 inch flour tortillas
  • Toppings of your choice, for example: tomatoes, scallions, olives

Instructions:

Preheat oven to 350 degrees. Brown ground beef in a pan. Add taco seasoning. Drain if necessary. Spray a baking sheet with nonstick cooking spray.Place a tortilla on a tray. Spread with beans and then with meat. Cover with the second tortilla. Bake for 10 minutes. Remove from oven.Spread tortilla with sauce and then top with cheese and desired toppings. Bake for another 5 to 10 minutes or until the cheese is completely melted. Allow to cool slightly before cutting.
