Cheesecake Fruit Salad

Sometimes you feel like eating fruit for dessert, but maybe it doesn’t seem fancy enough. This fruit salad with cheesecake solves this problem without complicating the dish. You see, the thick, creamy salad dressing is so delicious and so easy to make that it hardly takes any time. And because it contains a minimal amount of sugar, it’s never too sweet, like a good cheesecake.

With real cream cheese and lemon juice, this dessert tastes like no-bake cheesecake, but requires even less effort to make (if you can believe it).This dessert almost reminds me of an old school ambrosia recipe that used to be so popular at picnics and potlucks. But this one is made with less sugar and no coconut, nuts or gelatin and uses only fresh fruit.

INGREDIENTS

  • 1 package (8 oz) cream cheese, room temperature
  • 1 1/2 cups frozen whipping cream, thawed
  • 1/4 cup vanilla Greek yogurt or triple cream
  • 1/4 cup powdered sugar, sifted
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 5 cups chopped ripe fruits (such as pineapple, strawberries, blueberries, melon, mango and/or grapes)

PREPARATION

Mix cream cheese, whipped cream, yogurt, powdered sugar, lemon juice and vanilla. Bowl of electric mixer. Stir everything until smooth.
Mix the fruit in a large bowl. Pour the cheesecake topping over the fruit and stir everything together. Serve immediately or refrigerate until ready to serve (up to 2 hours).
