INGREDIENTS

For the Cookie Dough:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 giant eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

 

INSTRUCTIONS

1. Prepare the Cheesecake Filling:

In a medium bowl, beat the cream cheese, 1/4 cup granulated sugar, and 1 teaspoon vanilla extract till smooth. Set aside.

2. Make the Cookie Dough:

In a giant mixing bowl, cream collectively the softened butter, 1 cup granulated sugar, and 1 cup brown sugar till mild and fluffy.
Add the eggs one at a time, beating properly after every addition. Stir in two teaspoons of vanilla extract.
In a separate bowl, whisk collectively the flour, baking soda, and salt. Gradually add the dry components to the moist mixture, mixing till simply combined.
Fold in the chocolate chips.

3. Assemble the Cookies:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Scoop a tablespoon of cookie dough and flatten it slightly. Add a teaspoon of the cheesecake filling to the center.
Take some other tablespoon of cookie dough, flatten it, and region it on pinnacle of the filling, sealing the edges.
Place the crammed cookies on the organized baking sheets, leaving about two inches of house between each.

4. Bake the Cookies:

Bake the cookies for 12-15 minutes or till the edges are golden brown and the facilities are set.
Allow the cookies to cool on the baking sheet for 5 minutes earlier than transferring them to a wire rack to cool completely.
