Hello guys!Natasha from Salt & Lavender here with my monthly guest post. Rumor has it that Chicken Lombardy was a dish served at the Olive Garden restaurant. It was so popular that it appeared online and there are many different versions. This “copycat” version is very easy to make, doesn’t require many ingredients, and is sure to become a family favorite!

I make this dish easily using an ovenproof pan.This way you can easily start the recipe on the stove and finish it in the oven.

Ingredients

8-ounce package fresh sliced ​​mushrooms.
2 tablespoons melted butter.
6 Skinless, boneless chicken breast.
½ cup all-purpose flour.
⅓ cup butter.½ cup chicken broth.
½ teaspoon salt.
⅛ teaspoon pepper.
½ cup grated mozzarella cheese.
½ cup Parmesan cheese.2 spring onions chopped.

Preparation

In a large non-stick pan, melt 2 tablespoons of butter over medium-high heat and fry the mushrooms for 3 to 5

minutes, stirring constantly.

Cut each chicken breast in half lengthwise, place between two sheets of sturdy plastic wrap and flatten

to 1/2-inch thickness.
