Homemade English Toffee Recipe (Chocolate Almond Toffee)

Introduction:

This buttery and crunchy English Toffee is topped with smooth melted chocolate and a sprinkle of chopped nuts. It’s a rich, irresistible treat that’s perfect for holidays, parties, or gift-giving. With just a few simple ingredients, you can create this classic candy right in your kitchen.

Ingredients:

  • 1 cup (2 sticks) unsalted butter

  • 1 cup granulated sugar

  • ¼ teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 cups semisweet or milk chocolate chips

  • 1 cup chopped nuts (almonds, pecans, or walnuts), divided

Instructions:

  1. Prepare the Pan:
    Line a baking sheet with parchment paper or a silicone baking mat. Sprinkle half of the chopped nuts evenly across the surface.

  2. Make the Toffee:
    In a medium saucepan over medium heat, combine butter, sugar, and salt. Stir constantly until the mixture melts and starts to bubble.

    • Continue cooking, stirring frequently, until the mixture reaches 300°F (150°C) on a candy thermometer (the hard crack stage).

    • Remove from heat immediately and stir in the vanilla extract.

  3. Pour and Spread:
    Quickly pour the hot toffee mixture over the chopped nuts on your prepared pan. Use a spatula to spread it evenly before it hardens.

  4. Add Chocolate:
    Sprinkle the chocolate chips over the hot toffee. Let them sit for 2–3 minutes until melted, then spread the chocolate evenly with a spatula.

  5. Add Toppings:
    Sprinkle the remaining chopped nuts evenly over the melted chocolate. Lightly press them in so they stick.

  6. Cool and Break:
    Allow the toffee to cool completely at room temperature (or refrigerate for about 1 hour). Once firm, break it into pieces by hand.

Storage:

Store in an airtight container at room temperature for up to 2 weeks or refrigerate for longer freshness.

Tips:

  • Use a candy thermometer for perfect texture — overcooking can cause bitterness.

  • Try dark chocolate or white chocolate for variety.

  • For extra crunch, mix a few crushed pretzels into the topping.
