 Introduction

Runzas are a beloved Nebraska classic — soft bread pockets filled with seasoned ground beef, tender cabbage, and onions. Traditionally made from scratch, this easy version uses frozen roll dough to save time while still delivering that cozy, homemade flavor. They’re perfect for dinner, meal prep, or even a hearty snack on a chilly day.

 Ingredients

  • 16 Rhodes frozen unbaked dinner rolls

  • 1 lb ground beef

  • 2 tablespoons butter

  • 1 small yellow onion, finely chopped

  • 2 cups finely chopped cabbage

  • Salt and pepper, to taste

  • 1–2 tablespoons all-purpose flour (for dusting)

  • 1 egg

  • 1 tablespoon milk

 Instructions

1️⃣ Thaw and Rise the Dough
Place frozen rolls several inches apart on parchment-lined baking sheets. Cover loosely with plastic wrap and let rise at room temperature until doubled in size, about 3–5 hours.

2️⃣ Make the Filling
In a large skillet over medium heat, brown the ground beef. When it’s about halfway cooked, add the butter, chopped onion, and cabbage. Cook until the beef is fully browned and the vegetables are soft and tender. Season with salt and pepper to taste. Remove from heat and let cool slightly.

3️⃣ Preheat Oven
Preheat your oven to 350°F (175°C).

4️⃣ Fill the Dough
Lightly flour your work surface. Flatten each dough ball into a small circle, like mini pizza dough. Place a rounded spoonful of the beef mixture into the center. Bring the edges of the dough up and pinch to seal. Gently roll in your hands to smooth the seams. Place seam-side down on the prepared baking sheet.

5️⃣ Second Rise
Cover loosely with plastic wrap and let the filled Runzas rest for 30 minutes.

6️⃣ Egg Wash
Whisk together the egg and milk. Lightly brush the tops of the dough with the egg wash.

7️⃣ Bake
Bake for 18–20 minutes, or until golden brown. Rotate the baking sheet halfway through for even browning.
