Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs (about 15 full graham crackers)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Lemon Filling:

  • 1 cup fresh lemon juice (about 4-5 lemons)
  • 1 tablespoon lemon zest
  • 1 can (14 ounces) sweetened condensed milk
  • 4 large egg yolks

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly moistened.
    • Press the crumb mixture firmly into the bottom of the prepared baking pan to form an even layer.
    • Bake in the preheated oven for 10 minutes. Remove from the oven and set aside to cool slightly while you prepare the filling.
  3. Prepare the Lemon Filling:
    • In a large mixing bowl, whisk together the egg yolks, sweetened condensed milk, fresh lemon juice, and lemon zest until smooth and well combined.
    • Pour the lemon filling over the slightly cooled crust, spreading it out evenly.
  4. Bake:
    • Return the pan to the oven and bake for 20-25 minutes, or until the filling is set and slightly firm to the touch. The edges may be lightly browned.
  5. Cool and Chill:
    • Remove the lemon bars from the oven and let them cool to room temperature. Once cooled, refrigerate for at least 2 hours to allow the filling to fully set.
  6. Serve:
    • Using the parchment paper overhang, lift the lemon bars out of the pan and place them on a cutting board. Cut into squares or bars.
