  • 2 cups crushed chocolate cookies (for the crust)
  • 1/4 cup melted butter
  • 3 packages (8 oz each) cream cheese, softened

  • 1 cup heavy cream
  • 1/2 cup caramel sauce (plus extra for topping)

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • Combine the crushed chocolate cookies and melted butter in a bowl. Mix until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then let it cool.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and heavy cream.
    • Pour half of the filling over the cooled crust. Drizzle with caramel sauce and sprinkle with chopped pecans.
    • Pour the remaining filling on top and smooth it out.
  3. Bake the Cheesecake:
    • Place the springform pan in a larger baking dish. Fill the larger dish with hot water halfway up the sides of the springform pan to create a water bath.
    • Bake for 60-70 minutes, or until the center is set and the top is lightly browned.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly open for an hour. This helps prevent cracking.
  4. Add the Caramel and Pecans:
    • Once the cheesecake is completely cooled, remove it from the springform pan and transfer it to a serving plate.
    • Drizzle the top with more caramel sauce and sprinkle generously with chopped pecans.
  5. Chill and Serve:
    • Refrigerate the cheesecake for at least 4 hours, preferably overnight, before serving.
