Instructions:
- Prepare the Beef:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Season the beef cubes with salt and pepper. Add the beef to the pot and brown on all sides. Remove the beef and set aside.
- Sauté the Vegetables:
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent and fragrant.
- Stir in the tomato paste, dried thyme, and dried rosemary. Cook for another minute.
- Add the Liquids:
- Pour in the beef broth and red wine (if using). Stir to combine and bring to a boil.
- Add the bay leaves and return the browned beef to the pot. Reduce the heat to low and let it simmer for 1 hour, or until the beef is tender.
- Add the Vegetables:
- Add the carrots, potatoes, and pearl onions to the pot. Stir to combine.
- Cover and continue to simmer for another 30-45 minutes, or until the vegetables are tender.
- Final Seasoning:
- Remove the bay leaves and adjust the seasoning with salt and pepper to taste.
- Serve:
