Chewy Chocolate Cookies

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips, melted
  • 1/2 cup mini chocolate chips (optional, for extra texture)

Instructions:

  1. Prepare the Dough:
    • In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
    • In a large mixing bowl, combine the melted butter and granulated sugar until smooth.
    • Add the eggs and vanilla extract, mixing well.
    • Gradually add the dry ingredients to the wet mixture, stirring until combined.
    • Mix in the melted chocolate chips until the dough is smooth.
    • Fold in the mini chocolate chips, if using.
  2. Chill the Dough:
    • Cover the dough with plastic wrap and refrigerate for at least 30 minutes to firm up.
  3. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper.
  4. Shape the Cookies:
    • Using a tablespoon or cookie scoop, portion out the dough and roll it into balls.
    • Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
    • Flatten each dough ball slightly with your fingers or the back of a spoon.
  5. Bake the Cookies:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
    • The centers will look slightly underbaked, but they will firm up as they cool.
  6. Cool and Serve:
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
