This Pineapple Poke Cake is a tropical delight that’s both refreshing and indulgent. The cake is incredibly moist, thanks to the pineapple juice and bits of pineapple mixed into the batter. Topped with a luscious cream cheese frosting and sprinkled with chopped nuts, this dessert is perfect for any occasion.

Ingredients:

For the Cake:

  • 1 box yellow cake mix
  • 1 can (20 ounces) crushed pineapple in juice, undrained
  • 1/2 cup vegetable oil
  • 3 large eggs

For the Topping:

  • 1 can (14 ounces) sweetened condensed milk

For the Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped nuts (such as walnuts or pecans), for garnish

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. Mix the Cake Batter: In a large bowl, combine the cake mix, undrained crushed pineapple, vegetable oil, and eggs. Beat on medium speed for 2 minutes, or until the batter is smooth and well combined.
  3. Bake: Pour the batter into the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  4. Poke the Cake: While the cake is still warm, use the handle of a wooden spoon to poke holes all over the top of the cake.
  5. Add Sweetened Condensed Milk: Pour the sweetened condensed milk over the cake, allowing it to soak into the holes. Let the cake cool completely.
  6. Prepare the Frosting: In a large bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, one cup at a time, until fully combined. Mix in the vanilla extract and the drained crushed pineapple.
  7. Frost the Cake: Spread the cream cheese frosting evenly over the cooled cake. Sprinkle with chopped nuts.
  8. Chill and Serve: Refrigerate the cake for at least 1 hour before serving. This helps the flavors to meld together and makes it easier to slice.

This Pineapple Poke Cake is a delightful combination of sweet and tangy flavors, making it a perfect dessert for summer parties, potlucks, or any special occasion.
