  • 2 cans of full-fat coconut milk
  • 2 tablespoons of maple syrup or another sweetener of choice
  • 2 probiotic capsules (make sure they are dairy-free)
  • 1 teaspoon of vanilla extract (optional)

Instructions:

  1. Prepare the Coconut Milk: Shake the cans of coconut milk well before opening. Pour the coconut milk into a clean, sterilized mixing bowl. If the coconut milk has separated, whisk it until smooth and creamy.
  2. Add Sweetener and Probiotics: Stir in the maple syrup (or sweetener of choice) and the vanilla extract, if using. Open the probiotic capsules and sprinkle the contents into the coconut milk mixture. Discard the empty capsules. Whisk the mixture thoroughly to combine.
  3. Ferment the Yogurt: Transfer the mixture into a clean, sterilized glass jar or container. Cover the jar with a clean cloth or a piece of cheesecloth, secured with a rubber band. This allows the yogurt to breathe while keeping out any contaminants. Place the jar in a warm, dark place, such as a turned-off oven or a kitchen cabinet, for 24-48 hours. The longer it ferments, the tangier the yogurt will become.
  4. Check and Stir: After 24-48 hours, check the yogurt. It should have thickened and developed a tangy aroma. If it has not thickened to your liking, allow it to ferment for a few more hours. Once it has reached the desired consistency, give it a good stir.
  5. Chill and Serve: Cover the jar with a lid and refrigerate the yogurt for at least 6 hours to chill and further thicken. The yogurt will continue to thicken as it chills. Once chilled, stir the yogurt before serving.
  6. Enjoy: Serve your homemade coconut yogurt with your favorite toppings such as fresh fruit, granola, nuts, or a drizzle of honey. Enjoy it as a breakfast, snack, or dessert.
