Delicious Chicken Stir-Fry with Vegetables

Ingredients:
- 1 pound of chicken breast, thinly sliced
- 2 tablespoons of vegetable oil
- 1 large onion, thinly sliced
- 2 cloves of garlic, minced
- 1 red bell pepper, thinly sliced
- 1 cup of carrots, julienned
- 1 cup of mushrooms, sliced
- 1 cup of broccoli florets
- 2 tablespoons of soy sauce
- 2 tablespoons of oyster sauce
- 1 tablespoon of hoisin sauce
- 1 tablespoon of cornstarch mixed with 2 tablespoons of water (optional, for thickening)
- 2 eggs, scrambled and cut into strips
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions:
- Prepare the Ingredients: Slice the chicken breast and vegetables as indicated. Prepare the sauce by mixing soy sauce, oyster sauce, and hoisin sauce in a small bowl. If you prefer a thicker sauce, mix cornstarch with water and set aside.
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and season with salt and pepper. Stir-fry until the chicken is cooked through and slightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Stir-Fry the Vegetables: In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sliced onions, and cook for 2-3 minutes until the onions are translucent. Add the bell pepper, carrots, mushrooms, and broccoli, and stir-fry for another 5-7 minutes until the vegetables are tender but still crisp.
- Combine and Cook: Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables, and stir well to combine. If using cornstarch, add the mixture to the skillet and stir until the sauce thickens.
- Add Eggs: Add the scrambled egg strips to the skillet and gently mix them into the stir-fry.
- Serve: Garnish the stir-fry with chopped green onions. Serve hot over steamed rice or noodles for a complete meal.
