Chocolate Pecan Clusters
Ingredients:
- 2 cups pecan halves
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
- 1/2 teaspoon sea salt (optional, for sprinkling)
Instructions:
- Prepare a Baking Sheet: Line a baking sheet with parchment paper or a silicone baking mat.
- Toast the Pecans: In a dry skillet over medium heat, toast the pecan halves for 3-5 minutes, stirring frequently, until they become fragrant. Remove from heat and let them cool.
- Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil or shortening (if using). Microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth.
- Make the Clusters: Drop small spoonfuls of the melted chocolate onto the prepared baking sheet. Place 3-4 pecan halves on top of each spoonful of chocolate. Drizzle more melted chocolate over the pecans to cover them completely.
- Optional Sea Salt: Sprinkle a small pinch of sea salt over each cluster for an added flavor contrast.
- Chill the Clusters: Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate is fully set.
- Serve and Store: Once the chocolate is set, remove the clusters from the baking sheet. Store them in an airtight container at room temperature or in the refrigerator.
