Chicken Salad Croissant Sandwich

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt or sour cream
  • 1/2 cup celery, diced
  • 1/2 cup red grapes, halved
  • 1/4 cup sliced almonds
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 4 croissants, sliced open
  • Lettuce leaves (optional)

Instructions:

  1. Prepare the Chicken Salad: In a large bowl, combine the shredded or diced cooked chicken, mayonnaise, Greek yogurt or sour cream, diced celery, halved grapes, sliced almonds, and chopped dill.
  2. Add Lemon Juice and Seasoning: Add the lemon juice, then season with salt and black pepper to taste. Mix well until all ingredients are evenly coated.
  3. Assemble the Sandwiches: Open each croissant and place a lettuce leaf inside if using. Spoon a generous amount of chicken salad onto the bottom half of each croissant.
  4. Serve: Close the croissant over the chicken salad and serve immediately.
