Salmon Patties

Ingredients:

  • 1 12 ounce can pink salmon
  • 2 whole eggs
  • 1/4 cup chopped onion
  • 1/4 cup chopped pepper
  • 2 tablespoons yellow cornmeal
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 2 tablespoons mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Texas Pete’s Hot Sauce
  • 1/2 teaspoon ground black pepper
  • 1 slice crumbled white bread
  • 1/4 cup flour, adding slowly if necessary to adjust consistency.

Instructions:

  1. Open the canned salmon and place it in a colander in the sink to drain.
  2. Remove the large bones if you don’t want them. However, they are still edible.
  3. Shred the salmon with a fork.Place the shredded salmon in a large bowl.
  4. Add two whole eggs.
  5. Add the chopped onions and peppers.
  6. Add cornmeal
  7. Add salt
  8. Add garlic powder
  9. Add mayonnaise
  10. Add Worcestershire sauce
  11. Add Texas Pete’s hot sauce
  12. Add the ground black pepper
  13. Crumble the slice of bread and add it to the bowl.
  14. Mix the ingredients gently without over-processing.If the mixture is too wet, add flour if necessary to adjust
  15. the consistency.
  16. Divide the mixture and form four burgers. Put aside.
  17. Heat a frying pan over medium heat and add butter or oil for frying.
  18. Place the burgers in the pan and fry the bottom.Carefully flip the burgers and brown the other side.
  19. When both sides are golden brown, remove from pan and drain on paper towels.
