Slow Cooker Shredded Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder (optional, for a bit of spice)
  • 1 tablespoon olive oil
  • Juice of 1 lime (optional)

Instructions:

  1. Prepare the Slow Cooker: Spray the inside of the slow cooker with non-stick cooking spray or lightly grease with olive oil.
  2. Layer the Ingredients: Place the chicken breasts in the bottom of the slow cooker. Add the diced tomatoes, chicken broth, chopped onion, minced garlic, salt, black pepper, paprika, cumin, and chili powder (if using).
  3. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.
  4. Shred the Chicken: Once cooked, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker and mix with the juices and vegetables.
  5. Optional Lime Juice: Stir in the juice of 1 lime for added flavor.
  6. Serve: Serve the shredded chicken as desired, such as in tacos, burritos, sandwiches, salads, or over rice.
