Savory Herb and Cheese Scones

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely chopped green onions
  • 1/2 cup finely chopped parsley
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons olive oil or melted butter for brushing

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
  3. Cut in Butter: Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  4. Add Cheese and Herbs: Stir in the shredded cheddar cheese, chopped green onions, and chopped parsley until evenly distributed.
  5. Mix Wet Ingredients: In a separate bowl, whisk together the milk and egg until well combined. Pour the wet mixture into the dry ingredients, stirring just until the dough comes together.
  6. Knead and Shape: Turn the dough out onto a floured surface and knead it gently a few times to bring it together. Pat the dough into a circle about 1-inch thick. Cut the circle into 8 wedges.
  7. Bake: Arrange the wedges on the prepared baking sheet. Brush the tops with olive oil or melted butter. Bake in the preheated oven for 18-20 minutes, or until golden brown and cooked through.
  8. Cool and Serve: Let the scones cool on the baking sheet for a few minutes before serving warm.
