Strawberry Horchata Recipe

Ingredients:

  • 1 cup long-grain white rice
  • 4 cups water, divided
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup sweetened condensed milk
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar (adjust to taste)
  • Ice cubes

Instructions:

  1. Prepare the Rice Base:
    • Rinse the rice under cold water until the water runs clear.
    • In a blender, combine the rinsed rice and 2 cups of water. Blend until the rice is coarsely ground.
    • Transfer the rice mixture to a large bowl and add the remaining 2 cups of water. Let it soak for at least 4 hours or overnight for best results.
  2. Blend the Strawberry Mixture:
    • In a blender, combine the strawberries, sweetened condensed milk, evaporated milk, vanilla extract, ground cinnamon, and granulated sugar. Blend until smooth.
  3. Combine and Strain:
    • Strain the rice mixture through a fine-mesh sieve or cheesecloth into a large pitcher, discarding the solids.
    • Add the strawberry mixture to the strained rice water, stirring well to combine.
  4. Chill and Serve:
    • Refrigerate the strawberry horchata for at least 1 hour before serving.
    • Serve over ice cubes in glasses.
