Creamy Coconut Bars

Ingredients:

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 cups sweetened shredded coconut

For the Topping:

  • 1 cup sweetened shredded coconut
  • 2 tablespoons sweetened condensed milk

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. Prepare Crust:
    • In a medium bowl, mix together the flour, granulated sugar, and melted butter until well combined.
    • Press the mixture evenly into the bottom of the prepared baking pan.
    • Bake for 10-12 minutes, or until the edges are lightly golden. Remove from oven and let cool slightly.
  3. Prepare Filling:
    • In a large bowl, whisk together the eggs and granulated sugar until well combined.
    • Add the sour cream, vanilla extract, salt, and baking powder, and whisk until smooth.
    • Fold in the shredded coconut until evenly distributed.
    • Pour the filling over the slightly cooled crust, spreading it evenly.
  4. Prepare Topping:
    • In a small bowl, mix the shredded coconut and sweetened condensed milk until well combined.
    • Sprinkle the coconut mixture evenly over the filling.
  5. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is set.
    • Remove from oven and let cool completely in the pan on a wire rack.
  6. Cut and Serve:
    • Once cooled, cut into bars and serve. Store any leftovers in an airtight container at room temperature or in the refrigerator.
