Ingredients

  • Pie Crust:

    • 1 1/2 cups (300g) granulated sugar
    • 3 tablespoons all-purpose flour

    • 1/4 cup (60ml) apple cider vinegar
    • 1 1/2 cups (360ml) water
    • 4 tablespoons unsalted butter
    • 3 large eggs, beaten

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare the Pie Crust:
    • Roll out your pie crust and fit it into a 9-inch pie pan.
    • Crimp the edges as desired and set aside.
  3. Make the Filling:
    • In a medium saucepan, combine the sugar, flour, cinnamon, nutmeg, and salt.
    • Stir in the apple cider vinegar and water, mixing until smooth.
    • Add the butter and cook over medium heat, stirring constantly until the mixture thickens and comes to a boil.
    • Reduce the heat and cook for an additional 2 minutes, stirring continuously.
    • Remove the saucepan from the heat and gradually stir in the beaten eggs, making sure to mix quickly to prevent the eggs from scrambling.
    • Return the saucepan to the heat and cook for another 2 minutes while stirring.
    • Remove from heat and stir in the vanilla extract.
  4. Assemble the Pie:
    • Pour the filling into the prepared pie crust.
    • Smooth the top with a spatula.
  5. Bake the Pie:
    • Place the pie in the preheated oven and bake for 25-30 minutes, or until the filling is set and the crust is golden brown.
  6. Cool and Serve:
    • Allow the pie to cool completely before slicing and serving.
