Apple Pecan Bundt Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 ½ cups granulated sugar
  • ½ cup vegetable oil
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups chopped apples (about 2 medium apples)
  • 1 cup chopped pecans

Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. Mix Wet Ingredients:
    • In a large bowl, beat the sugar, oil, and applesauce together. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine Mixtures:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Add Apples and Pecans:
    • Fold in the chopped apples and pecans until evenly distributed.
  6. Bake:
    • Pour the batter into the prepared Bundt pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    • Allow the cake to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely. Serve and enjoy!
