Mediterranean Pasta Salad
Ingredients:
- 12 ounces penne pasta
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach leaves
- 1/2 cup kalamata olives, pitted and halved
- 1/2 cup green olives, pitted and halved
- 1/2 red onion, thinly sliced
- 1/2 cup roasted red peppers, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente.
- Drain the pasta and rinse under cold water to cool it down. Set aside.
- Prepare the Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, basil, salt, and pepper. Adjust seasoning to taste.
- Assemble the Salad:
- In a large salad bowl, combine the cooked pasta, cherry tomatoes, spinach, kalamata olives, green olives, red onion, roasted red peppers, and feta cheese.
- Dress the Salad:
- Pour the dressing over the salad and toss gently to combine all the ingredients and evenly coat them with the dressing.
- Serve:
- Let the salad sit for at least 15 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
Tips:
- Add Protein: For a heartier salad, add grilled chicken, shrimp, or chickpeas.
- Herbs: Fresh herbs like parsley or basil can be added for extra flavor.
- Vinegar: Substitute red wine vinegar with balsamic or lemon juice for a different taste.
