Moist Butter Cake

Ingredients:

  • 1 cup (230g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) brown sugar
  • 4 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) buttermilk
  • 2 and 1/2 cups (315g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Cream the Butter and Sugars:
    • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 3-5 minutes.
  3. Add Eggs and Vanilla:
    • Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Mix Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour into Pan:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake:
    • Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Cool:
    • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Serve:
    • Slice and serve the cake as is, or with a dusting of powdered sugar or a drizzle of glaze for extra sweetness.

Tips:

  • Add Zest: For a citrus twist, add the zest of one lemon or orange to the batter.
  • Nuts or Fruits: Mix in chopped nuts or dried fruits for added texture.
  • Glaze: Make a simple glaze with powdered sugar and milk for a sweet topping.
