Bacon Jam

Ingredients:

  • 1 pound bacon, chopped
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • 1/4 cup brewed coffee
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon black pepper
  • Pinch of cayenne pepper (optional)

Instructions:

  1. Cook the Bacon:
    • In a large skillet, cook the chopped bacon over medium heat until crispy. Transfer the bacon to a paper towel-lined plate and drain all but about 2 tablespoons of the bacon fat from the skillet.
  2. Cook the Onions and Garlic:
    • In the same skillet, add the chopped onions and cook over medium heat until they are soft and translucent, about 5 minutes.
    • Add the minced garlic and cook for an additional minute, until fragrant.
  3. Combine Ingredients:
    • Add the brown sugar, apple cider vinegar, maple syrup, coffee, balsamic vinegar, black pepper, and cayenne pepper to the skillet.
    • Stir well and bring the mixture to a boil.
  4. Simmer:
    • Reduce the heat to low and let the mixture simmer for about 30-40 minutes, stirring occasionally, until it thickens and becomes jam-like in consistency.
  5. Blend (Optional):
    • For a smoother texture, transfer the mixture to a food processor and pulse a few times until it reaches your desired consistency.
  6. Store:
    • Let the bacon jam cool to room temperature before transferring it to a jar or airtight container.
    • Store in the refrigerator for up to two weeks.
