Bacon Jam
Ingredients:
- 1 pound bacon, chopped
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup maple syrup
- 1/4 cup brewed coffee
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon black pepper
- Pinch of cayenne pepper (optional)
Instructions:
- Cook the Bacon:
- In a large skillet, cook the chopped bacon over medium heat until crispy. Transfer the bacon to a paper towel-lined plate and drain all but about 2 tablespoons of the bacon fat from the skillet.
- Cook the Onions and Garlic:
- In the same skillet, add the chopped onions and cook over medium heat until they are soft and translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute, until fragrant.
- Combine Ingredients:
- Add the brown sugar, apple cider vinegar, maple syrup, coffee, balsamic vinegar, black pepper, and cayenne pepper to the skillet.
- Stir well and bring the mixture to a boil.
- Simmer:
- Reduce the heat to low and let the mixture simmer for about 30-40 minutes, stirring occasionally, until it thickens and becomes jam-like in consistency.
- Blend (Optional):
- For a smoother texture, transfer the mixture to a food processor and pulse a few times until it reaches your desired consistency.
- Store:
- Let the bacon jam cool to room temperature before transferring it to a jar or airtight container.
- Store in the refrigerator for up to two weeks.
