Marinated Mozzarella Salad

Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1 cup marinated artichoke hearts, drained and quartered
  • 1 cup mixed olives (green and black), pitted
  • 1 cup mini mozzarella balls (bocconcini or ciliegine)
  • 2 tablespoons sun-dried tomatoes, chopped
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, balsamic vinegar, red pepper flakes, salt, and pepper.
  2. Assemble the Salad:
    • In a large bowl, combine the cherry tomatoes, artichoke hearts, olives, mozzarella balls, sun-dried tomatoes, and capers.
  3. Add Herbs and Dressing:
    • Add the chopped basil, parsley, and rosemary to the salad.
    • Pour the dressing over the salad and toss gently to combine.
  4. Marinate:
    • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve:
    • Garnish with additional fresh herbs if desired.
    • Serve chilled or at room temperature as an appetizer or side dish.
