Marinated Mozzarella Salad
Ingredients:
- 1 cup cherry tomatoes, halved
- 1 cup marinated artichoke hearts, drained and quartered
- 1 cup mixed olives (green and black), pitted
- 1 cup mini mozzarella balls (bocconcini or ciliegine)
- 2 tablespoons sun-dried tomatoes, chopped
- 2 tablespoons capers, drained
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh rosemary, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions:
- Prepare the Dressing:
- In a small bowl, whisk together the olive oil, balsamic vinegar, red pepper flakes, salt, and pepper.
- Assemble the Salad:
- In a large bowl, combine the cherry tomatoes, artichoke hearts, olives, mozzarella balls, sun-dried tomatoes, and capers.
- Add Herbs and Dressing:
- Add the chopped basil, parsley, and rosemary to the salad.
- Pour the dressing over the salad and toss gently to combine.
- Marinate:
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve:
- Garnish with additional fresh herbs if desired.
- Serve chilled or at room temperature as an appetizer or side dish.
