Lime and Pistachio Cheesecake
Ingredients:
- 200g digestive biscuits, crushed
- 100g butter, melted
- 300g cream cheese, softened
- 100g granulated sugar
- 200ml heavy cream
- Juice and zest of 3 limes
- 100g pistachios, finely chopped
- 100g cherries, for topping
- Lime slices, for garnish
- Whipped cream, for garnish
Instructions:
- Prepare the base: Mix crushed biscuits with melted butter and press into the bottom of a springform pan. Chill in the refrigerator for at least 30 minutes.
- Make the filling: In a bowl, combine cream cheese, sugar, lime juice, and zest. Beat until smooth. In a separate bowl, whip the heavy cream to stiff peaks and fold into the cream cheese mixture. Stir in half of the chopped pistachios.
- Assemble the cheesecake: Pour the filling over the biscuit base and smooth the top. Refrigerate for at least 4 hours, or until set.
- Decorate: Before serving, top with whipped cream, remaining pistachios, cherries, and lime slices.
- Serve chilled: Enjoy this refreshing dessert after a lovely meal.
