Pan-Seared Steak with Herb Butter
Ingredients:
- 2 thick-cut steaks (such as ribeye, filet mignon, or sirloin)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice (optional)
Instructions:
- Prepare the Steaks:
- Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.
- Let the steaks sit at room temperature for about 30 minutes before cooking.
- Make the Herb Butter:
- In a small bowl, mix together the butter, garlic, rosemary, thyme, and parsley. Set aside.
- Heat the Pan:
- Heat the olive oil in a large cast-iron skillet or heavy pan over high heat until just beginning to smoke.
- Sear the Steaks:
- Add the steaks to the pan and sear for about 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness.
- During the last minute of cooking, add the herb butter to the pan and spoon it over the steaks as they finish cooking. You can also add a splash of lemon juice at this stage for a hint of acidity.
- Rest the Steaks:
- Remove the steaks from the pan and let them rest on a cutting board for about 5 minutes to allow the juices to redistribute.
- Serve:
- Slice the steaks against the grain and serve with the melted herb butter drizzled over the top.
- Enjoy.
