Avocado and Egg Salad

Ingredients:

  • 2 ripe avocados, diced
  • 4 hard-boiled eggs, sliced
  • 4 cups mixed greens (such as spinach, arugula, and kale)
  • 1/4 red onion, thinly sliced
  • 2 tablespoons chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice (or to taste)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prepare the Ingredients:
    • Dice the avocados and slice the hard-boiled eggs.
    • Thinly slice the red onion.
    • Chop the chives and parsley.
  2. Make the Dressing:
    • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  3. Assemble the Salad:
    • In a large bowl, add the mixed greens.
    • Top with diced avocado, sliced hard-boiled eggs, and thinly sliced red onion.
    • Sprinkle chopped chives and parsley over the salad.
  4. Dress the Salad:
    • Drizzle the dressing over the salad and toss gently to combine.
  5. Season:
    • Add salt and freshly ground black pepper to taste.
