Creamed Spinach

Ingredients:
- 2 pounds (900g) fresh spinach, washed and trimmed (or 2 packages frozen spinach, thawed and drained)
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/4 teaspoon ground nutmeg
- Salt and black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions:
- Prepare the Spinach:
- If using fresh spinach, bring a large pot of salted water to a boil. Add the spinach and cook for 1-2 minutes, just until wilted. Drain the spinach and rinse it under cold water to stop the cooking process. Squeeze out as much excess water as possible, then chop the spinach roughly.
- If using frozen spinach, make sure it is fully thawed and drained, then squeeze out excess water.
- Cook the Aromatics: In a large skillet or saucepan, melt the butter over medium heat. Add the chopped onion and cook until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another 1 minute, until fragrant.
- Make the Cream Sauce: Sprinkle the flour over the onion and garlic, stirring constantly to create a roux. Cook the flour for about 1-2 minutes to eliminate the raw taste. Slowly whisk in the milk and heavy cream, making sure there are no lumps. Continue cooking, whisking frequently, until the sauce thickens, about 3-5 minutes.
- Season and Add Spinach: Stir in the ground nutmeg, and season the sauce with salt and black pepper to taste. Add the chopped spinach to the sauce, stirring to combine. Cook for an additional 2-3 minutes, until the spinach is fully coated and heated through.
- Optional: Add Parmesan: For extra flavor, stir in the grated Parmesan cheese until melted and combined.
- Serve: Transfer the creamed spinach to a serving dish and enjoy it warm. This dish pairs wonderfully with grilled or roasted meats.
Tips:
- For a richer sauce, you can substitute half of the milk with more heavy cream.
- If you prefer a smoother texture, you can blend the creamed spinach using an immersion blender before serving.
