Classic Banana Bread

Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup (120g) sour cream or Greek yogurt
  • 3 large ripe bananas, mashed
  • 1/2 cup (85g) chopped walnuts or chocolate chips (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5 inch (23×13 cm) loaf pan with parchment paper, leaving some overhang for easy removal.
  2. Mix Wet Ingredients: In a large bowl, whisk together the melted butter and sugar until well combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Add Sour Cream and Bananas: Fold in the sour cream (or Greek yogurt) and mashed bananas until well incorporated. If you’re adding walnuts or chocolate chips, fold them in now.
  5. Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  6. Cool and Serve: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Tips:

  • For added texture, sprinkle some extra chopped nuts or chocolate chips on top before baking.
  • You can also add a sprinkle of coarse sugar on top for a nice crunchy crust.
