Ingredients:
- 2 cups cottage cheese (small curd works best)
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup bell pepper, diced (any color)
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley or dill, chopped
- 1 avocado, diced (optional)
- Salt and black pepper, to taste
- 1 tablespoon olive oil (optional)
- 1 tablespoon lemon juice or vinegar (optional)
Instructions:
- Prepare the Vegetables:
- Dice the cucumber, cherry tomatoes, bell pepper, red onion, and avocado (if using).
- Chop the fresh parsley or dill.
- Mix the Salad:
- In a large mixing bowl, combine the cottage cheese, cucumber, cherry tomatoes, bell pepper, red onion, and fresh herbs.
- If you’re using avocado, gently fold it into the salad to avoid mashing it.
- Season the Salad:
- Season the salad with salt and black pepper to taste.
