Chocolate Pecan Delight
Ingredients:
- Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup finely chopped pecans
- Cream Cheese Layer:
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped topping (like Cool Whip)
- Chocolate Pudding Layer:
- 2 packages (3.9 oz each) instant chocolate pudding mix
- 3 cups cold milk
- Topping:
- 1 cup whipped topping
- 1/2 cup chopped pecans
- Grated chocolate or chocolate shavings (optional)
Instructions:
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, softened butter, and chopped pecans. Mix until well combined.
- Press the mixture evenly into the bottom of a 9×13-inch baking dish.
- Bake for 15-20 minutes, or until the crust is lightly golden brown. Allow it to cool completely.
- Make the Cream Cheese Layer:
- In a medium bowl, beat the softened cream cheese until smooth.
- Gradually add in the powdered sugar and continue to beat until fully incorporated.
- Fold in the whipped topping until the mixture is smooth and creamy.
- Spread the cream cheese mixture evenly over the cooled crust.
- Prepare the Chocolate Pudding Layer:
- In a large bowl, whisk together the instant chocolate pudding mix and cold milk until thickened (about 2-3 minutes).
- Spread the chocolate pudding over the cream cheese layer.
- Add the Topping:
- Spread the remaining 1 cup of whipped topping over the chocolate pudding layer.
- Sprinkle the chopped pecans evenly over the top.
- If desired, garnish with grated chocolate or chocolate shavings.
- Chill and Serve:
- Cover the dish with plastic wrap and refrigerate for at least 2 hours, or until set.
- Cut into squares and serve chilled.
