Stir and let it simmer for a few minutes until the flavors meld together. Remove from heat and let the mixture cool slightly.
  3. Assemble the Eggrolls: Lay out an egg roll wrapper on a flat surface, placing it in a diamond shape with a corner pointing toward you. Fold the bottom corner over the filling, then fold in the sides. Roll the wrapper tightly and seal the edges with a bit of water or egg wash.
