Ingredients:

  • ¾ cup granulated sugar
  • 6 tbsp sour cream, room temperature

  • 3 large egg whites, room temperature
  • 1 ¼ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 6 tbsp milk, room temperature
  • 2 tbsp water, room temperature

For the pastry cream filling:

  • 2 egg yolks
  • 6 tbsp sugar
  • 1 ½ tbsp cornstarch
  • 1 cup + 2 tbsp milk
  • 1 tbsp salted butter
  • 1 tsp vanilla extract

For the chocolate ganache:

  • 12 oz semisweet chocolate chips
  • 2 tbsp light corn syrup
  • ¾ cup + 2 tbsp heavy whipping cream

 

Instructions:

  1. Cupcakes: Preheat the oven to 350°F and line a cupcake pan with liners. Cream together butter and sugar until light and fluffy. Add sour cream and vanilla, followed by egg whites in two batches. Gradually mix in dry ingredients and alternate with milk and water. Bake for 15-17 minutes or until a toothpick comes out clean.
  2. Pastry Cream: Beat egg yolks and set aside. Combine sugar, cornstarch, and milk in a saucepan, cook over medium heat until thickened. Temper the egg yolks by adding a bit of the hot mixture before combining with the rest. Simmer, then stir in butter and vanilla. Cool the cream.
  3. Ganache: Heat heavy cream until boiling, pour over chocolate and corn syrup. Let sit for a few minutes, then whisk until smooth. Cool in the fridge until it thickens.
