Ultimate Pico de Gallo is a fresh and vibrant Mexican salsa that is perfect for dipping tortilla chips or as a topping for tacos, nachos or grilled meats. Here is a recipe to make yourself:

Ingredients:

  • 4 medium-ripe tomatoes, diced
  • 1 small red onion, finely chopped
  • 1 jalapeno pepper, deseeded and finely chopped (adjust according to spiciness)
  • 1/4 cup freshly chopped coriander leaves
  • 2 Garlic cloves, minced
  • Juice of 1-2 limes, to taste
  • Salt to taste
  • Optional: 1/2 teaspoon ground cumin
  • Optional: 1/2 cup cucumber or diced mango for additional freshness and sweetness

Instructions:

Preparation ingredients: Wash and chop all vegetables. Try to dice them evenly to ensure even flavor distribution.
Combine Ingredients: In a bowl, combine the diced tomatoes, chopped red onion, jalapeno pepper, minced garlic, and chopped cilantro. If using cucumber or mango, add those too.Seasoning: Squeeze lime juice over the mixture. Start with the juice of one lime and add more if needed. Season with salt. Optionally sprinkle ground cumin over the mixture for additional flavor.
Mix well: Mix all ingredients gently until everything is well mixed.Be careful not to over-mash the tomatoes; The sauce should be chunky.
Chill: For the best flavor, let the pico de gallo rest in the refrigerator for at least 30 minutes so the flavors meld.
Serving: After the sauce has cooled, give the sauce a final stir and season if necessary. Serve Ultimate Pico de Gallo with tortilla chips, as a topping for tacos or grilled meats, or with your favorite Mexican dishes.
