This Lime Mousse is a light, refreshing dessert perfect for summer days or when you crave a tangy treat. This version uses fresh lime juice, but bottled lime juice works just as well.

Ingredients:

  • 1 cup crushed vanilla wafers (or graham crackers)
  • 1/4 cup melted butter
  • 1 can (15 oz) sweetened condensed milk
  • Juice from 3 limes (approximately 1/2 cup)
  • 1 teaspoon gelatin (1/2 of a standard envelope)
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • Lime zest (for garnish, optional)

Instructions:

  1. Prepare the Crust:
    • Mix the melted butter with the crushed vanilla wafers (or graham crackers).
    • Press this mixture into the bottom of your serving bowls or cups to form a base. Tamp it down firmly using the bottom of a glass.
  2. Prepare the Lime Mousse:
    • In a bowl, mix the sweetened condensed milk and lime juice until well combined.
    • In a small saucepan, sprinkle the gelatin over 1/4 cup of the cream and let it rest for 1-2 minutes.
    • Heat the cream and gelatin mixture over low heat, stirring until the gelatin dissolves completely.
    • Let the gelatin mixture cool while whipping the remaining cream with the sugar until it forms stiff peaks.
    • Slowly pour the cooled gelatin mixture into the whipped cream while mixing on low speed.
    • Fold in the lime and condensed milk mixture gently until fully combined.
  3. Assemble and Chill:
    • Spoon the mousse mixture over the prepared crusts in your bowls or cups.
    • Refrigerate the mousse for 2-3 hours to set.
  4. Garnish and Serve:
    • Just before serving, top the mousse with a dollop of whipped cream and sprinkle with lime zest for extra flavor and presentation.
    • Optional: garnish with thin slices of lime.
